Red Velvet Roll

Ingredients

  • Preparato per Red Velvet Babbi Home Bakery (Red Velvet mix)
  • 145 g butter or seed oil
  • 4 medium-sized eggs (about 200 g)
  • 250 g fresh cream
  • 200 g Mascarpone cheese
  • 150 g spreadable cheese
  • 85 g icing sugar
  • Black cherry sauce, to taste

Preparation

  • Prepare the base by whipping the Preparato per Red Velvet Babbi Home Bakery (Red Velvet Mix) with butter and eggs until light and fluffy.
  • Spread onto baking paper and bake in a preheated oven at 180°C for 20 min.
  • Once baked, turn it upside down and cover the surface with cling film so that it does not dry out and remains elastic, perfect for filling and then rolling up.
  • Meanwhile prepare the cream: semi-whip the fresh cream and set aside. Beat the mascarpone, spreadable cheese and icing sugar with electric whips. Add the whipped cream and whip for a few seconds.
  • Spread the cream on the cooled Red Velvet (keep some for decoration), roll it up and let it rest in the fridge overnight.
  • You can also keep the roll in the freezer for a few hours before serving for a perfect slice.
  • Decorate the surface with mascarpone cream and black cherry sauce.
