Pistachio filled biscuits

Ingredients
- 150 g Italian “00” flour
- 50 g pistachio flour
- 75 g butter (cold)
- 75 g icing sugar
- 1 egg
- 1 teaspoon of baking powder
- 1 pinch of salt
- Cremadelizia Pistacchio Babbi
Preparation
- Combine the flour and cold butter cut into cubes in a mixer. Blend with the blades to obtain a sandy texture.
- Add the sugar, pistachio flour, egg, baking powder and salt. Knead for a few more seconds to mix the ingredients well.
- Transfer the dough onto the work surface and knead it quickly with your hands to obtain a soft and compact dough.
- Wrap it in cling film and leave to harden in the fridge for at least 30 minutes.
- Roll out the dough and fill the biscuits with a teaspoon of Cremadelizia Pistacchio Babbi
- Bake for 13 to 15 minutes in a preheated oven at 180°.
