Gluten-free Christmas biscuits

Ingredients
For the biscuits:
- 1 box Preparato per Biscotti Babbi Home Bakery (cookie mix)
- 200 g softened butter
- 65 g sugar
- 1 teaspoon cinnamon (or lemon or orange zest)
- 4 egg yolks
For the filling:
- 100 g white chocolate
- 25 g cream
- 4 teaspoons Salsa di Lampone Babbi Home Bakery (raspberry sauce)

Preparation
- Pour the Preparato per Biscotti senza glutine Babbi Home Bakery (gluten-free cookie mix) into a bowl, add the butter, sugar, cinnamon and egg yolks and mix well.
- Form a dough ball and place it on a sheet of baking paper.
- Flatten it with a rolling pin and then let it firm up in the fridge for at least 30 minutes.
- Roll out the dough to a height of about 3 mm and cut it out with a biscuit cutter. (P.S. If you want to hang the biscuits on the tree, don’t forget to make a small hole for the ribbon to pass through)!
- Bake in the oven at 180°C for about 15 minutes.
- Remove from the oven and allow to cool completely.
- Thread on the ribbon, tie a knot and your biscuits are ready to hang!
- If you want to fill them, melt the white chocolate in a microwave or bain-marie, add the hot cream and Salsa di Lampone Babbi Home Bakery (raspberry sauce).
- Mix well until smooth.
- Stuff the biscuits and pair them up.
