Recipe:

  • Ingredients – Banana Bread:
    • 1000 g Babbi Cupcake, Cake & Muffin Mix (gluten- and lactose-free)
    • 360 g vegetable oil
    • 600 g eggs
    • 40 g Babbi Banana Paste
    • 25 g cinnamon
    • 1000 g ripe bananas

  • Ingredients – Vanilla Mousse:
    • 1000 g lactose-free cream
    • 250 g Babbi Pronto Mousse
    • 30 g Babbi Vaniglia Suprema (pure Bourbon vanilla extract from Madagascar)

 

Method:

  • Banana Bread:
    • Whisk all ingredients in a planetary mixer for 4–6 minutes at high speed.
    • Grease the mould and fill it to ¼ with the banana batter.
    • Add banana slices, then cover with a thin layer of batter.
    • Bake at 170–180°C for 15–20 minutes until golden and fully baked inside.

 

  • Vanilla Mousse:
    • Whip the cream with Pronto Mousse B-Free until light and stable.
    • Decorate the Banana Bread with the mousse using a piping bag.
    • Finish with Babbi Variegato Caramel & Pecan for an extra touch of sweetness and crunch.
